LecturerToday I'll explore why each region keeps its own style of cooking, even in a connected world.

LecturerThe second reason is climate. In hot regions, people use more spice, partly because it once helped preserve food.
LecturerHistory matters too. Each wave of traders left behind new ingredients, and the tomato only reached Europe five hundred years ago.
LecturerA dish often carries memory. Families pass recipes from grandmother to grandchild, so cooking becomes a kind of storytelling.
LecturerCelebrations protect tradition as well. Certain foods appear only at a festival, which keeps the old method alive.
